It wouldn't be Christmas at many homes without
these nutty snowball cookies. This is an easy recipe
that the kids can have fun helping to make snowballs.
No snowball fights, though!
1/2 C. sugar
1/2 lb (2 sticks) butter, softened at room temp.
1 tsp vanilla
2 1/4 C. self-rising flour
1/2 tsp salt
3/4 C. pecans, chopped fine
powdered sugar for rolling the cookies
Preheat oven to 350°F.
Cream butter and sugar; add vanilla. Stir in flour, salt & pecans.
Roll into small balls and place on ungreased cookie sheet. Bake for 14 to 18 minutes, until cookies are firm and light brown on the bottoms.
Let cool on tray for 5 minutes, then remove from tray and roll in powdered sugar. Place on cooling racks to cool completely. Once cool, roll the cookies one more time in the powdered sugar.
Store in well- sealed containers. Can be frozen.
