Living is easy, delicious and nutritious when blueberries are on hand to enjoy in everyday treats. At the peak of the blueberry season, stock up and freeze some so they’ll be ready to go into cobblers, pies, pancakes, sauces and smoothies the rest of the year.
Please, please don’t wash the berries before freezing! Be sure they’re dry and unblemished, then place them in recloseable plastic bags for freezing. Because they’re dry when frozen, the blueberries remain separate and pour out easily, ready to wash and use in any quantity you need.
During the few times of the year when fresh blueberries are hard to find, you can count on finding frozen, canned or dried blueberries in your supermarket. Here are a few ideas:
Start the day with a refreshing jolt-using a blender, just whirl frozen blueberries, apple or cranberry juice and ice until slushy.
Take a baggie filled with fresh blueberries to enjoy during the morning commute to work.
Fill a thermos with cool fruit soup that could double as a refreshing smoothie it’s easy to make in the blender with blueberries, orange juice and a little melted orange sherbet.
Make a low-fat trail mix for an afternoon pick-up: Toss together whole grain cereal squares with dried blueberries and a few nuts or tiny pretzels.
Wow the family with colorful parfaits by layering prepared vanilla pudding, crushed gingersnaps and blueberries in tall glasses.
