For Busy Families, Simple Suppers Are Super With Turkey
For many families, especially those with on-the-go kids, the autumn season brings a mealtime challenge. Families eat more at-home meals; in fact nearly 80 percent of meals are prepared at home. But because of school and extracurricular activities, there's less time available to prepare meals, making convenience a major factor in deciding what to fix. Throw in the desire to provide appealing meals that are also healthy, and it's no wonder why many busy parents struggle for supper solutions.
"The reality is that busy families can have it all - they can have simple suppers that are easy to prepare, and they can ensure great tasting, more nutritious meals by simply adding turkey to many favorite dishes parents already routinely cook," said Jennifer Bushman, author of several Kitchen Coach cookbooks including Weeknight Cooking and Weekend Cooking. For example, there are a variety of simple-to-prepare meals - many of them regular family staples - that are every bit as tasty and which provide a healthy choice when made with turkey:
Easy Turkey Enchiladas
Ingredients
1 package Honeysuckle WhiteŽ Breast Cutlets, cut into 1-inch pieces
1 tablespoon olive oil
1 cup light sour cream
1 cup light ranch dressing
10 large (8-inch) flour tortillas
1 cup (8 ounce) shredded Monterey Jack cheese
2 cups bottled salsa
2 medium tomatoes, seeded and diced
2 green onions, chopped, optional
Preheat oven to 375° F. Heat oil in a large nonstick skillet over medium-high heat. Cook turkey, stirring constantly until no longer pink, about 10 minutes. In a small bowl, mix sour cream and ranch dressing. In a medium bowl, combine 1 cup sour cream mixture and turkey. Divide turkey mixture, cheese and salsa evenly over tortillas. Roll up and place seam-side down in a greased 9 x 11-inch baking pan. Bake, uncovered, for 25 to 30 minutes. Top with tomato, green onion and any remaining salsa and/or sour cream mixture

Italian Turkey Sausage with Pasta
Ingredients
1 package Honeysuckle WhiteŽ Sweet Italian Sausage
2 tablespoons olive oil
1 medium onion, chopped
2 cans (15 ounce each) whole peeled tomatoes with juice, broken up
1 package (16 ounce) penne, rotelle or fusilli pasta, cooked according to package directions
1 cup (8 ounce) Mozzarella cheese, cut into 1/2-inch pieces
Slice open package with sharp knife; remove sausage casings. Heat oil in a large nonstick skillet over medium-high heat. Cook onion until softened, about 5 minutes. Add sausage and tomato; crumble sausage. Cook, stirring constantly until sauce is thickened, about 20 minutes. In a large bowl, mix cooked pasta with meat sauce. Top pasta with cheese and serve.

Stove Top Turkey Sausage and Mushrooms
Ingredients
1 package Honeysuckle WhiteŽ Sweet Italian Sausage
2 tablespoons olive oil
1 package (8 ounce) sliced mushrooms
1 medium onion, chopped
1 large green bell pepper, seeded and chopped
1 cup uncooked white rice (not instant)
2 cups reduced-sodium chicken broth
Slice open package with sharp knife; remove sausage casings. Heat oil in a large nonstick skillet over medium-high heat. Crumble and cook sausage, mushroom, onion and bell pepper over medium-high heat until sausage is browned and vegetables are softened, about 8 minutes. Add rice, stirring to coat. Add broth and bring to a boil. Reduce heat, cover and simmer until broth has evaporated and rice is tender, about 20 minutes.

Turkey Sloppy Joes
Ingredients
1 package Honeysuckle WhiteŽ Ground Turkey, 7% Fat
2 tablespoons olive oil
1 medium onion, chopped
1 medium green bell pepper, seeded and chopped
1-1/2 cup (12 ounce) chili sauce
2 tablespoons Worcestershire sauce
6 (4 inch) hamburger buns
Green leaf lettuce, optional
1 medium tomato, sliced optional
Heat oil in a large nonstick skillet over medium-high heat. Cook onion and bell pepper until softened, about 5 minutes. Add turkey; crumble and cook until no longer pink, about 5 minutes; drain. Stir in chili sauce and Worcestershire sauce. Cook, covered, over low heat for 10 minutes. Divide mixture evenly over bottom of buns. Layer on lettuce and tomato, if desired. Top with remaining buns.

Turkey Lasagna
Ingredients
2 packages Honeysuckle WhiteŽ Ground Turkey, 7% Fat
1 tablespoon olive oil
1 jar (26 ounce) spaghetti sauce
6 lasagna noodles, cooked according to package directions
1 package (8 ounce) shredded Italian cheese blend
Preheat oven to 375° F. Heat oil in a large nonstick skillet over medium-high heat. Crumble and cook turkey until no longer pink, about 5 minutes; drain. Stir in spaghetti sauce. Spoon some meat sauce into the bottom of a 9 x 13-inch baking pan. Layer on 3 lasagna noodles, 1/2 of the meat sauce and 1/2 of the cheese. Repeat with remaining ingredients. Bake until hot and bubbly, about 30 minutes.

Spaghetti with Ground Turkey Meat Sauce
Ingredients
2 packages Honeysuckle WhiteŽ Ground Turkey, 7% Fat
3 tablespoons olive oil, divided
1 jar (26 ounce) spaghetti sauce
1 package (16 ounce) spaghetti, cooked according to package directions
Parmesan cheese, grated, as needed
Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Crumble and cook turkey until no longer pink, about 5 minutes; drain. Stir in spaghetti sauce. Mix cooked spaghetti with 2 tablespoons oil; stir in meat sauce. Sprinkle cheese over spaghetti, as desired.
