Roasted Garlic Pasta Bake


Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 4

8 oz. tri-colored rotini pasta, uncooked
2 cups cut asparagus spears or small sugar snap peas
3 Tbsp. butter
3 Tbsp. flour
1 ½ cups 2% or whole milk
½ tsp. salt
1 ¾ cups (7 oz.) Sargento® Bistro Blends Mozzarella & Asiago with Roasted Garlic Shredded Cheese, divided
1 pkg. (9 oz.) sliced fully cooked chicken sausage or 2 cups diced cooked ham
Paprika (optional)

1. Cook pasta according to package directions, adding asparagus during last 2 minutes of pasta cooking time.

2. Melt butter in a heavy medium saucepan over medium heat.  Add flour; cook, stirring frequently until flour mixture is bubbly and golden brown, 1 to 2 minutes.  Add milk and salt; bring to a simmer stirring frequently.  Simmer uncovered 1 minute.  Remove from heat; stir in 1 cup of cheese until melted.

3. Drain pasta and asparagus; return to same pot and add sausage and cheese sauce.  Toss well and transfer to a greased shallow baking dish; top with remaining 1 cup cheese.  Sprinkle with paprika, if desired.*  Bake in preheated 375°F oven for 20 minutes or until hot and bubbly.

*At this point, casserole may stand at room temperature up to 1 hour before baking.

Sicilian Style Pizza


Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 6

1 (12 inch) prepared pizza crust
1/3 cup pizza or spaghetti sauce
1 ¾ cups (7 oz.) Sargento® Bistro Blends Mozzarella with Sun Dried Tomatoes & Basil Shredded Cheese, divided
½ cup roasted red pepper strips
1/3 cup sliced pitted kalamata olives
¼ tsp. crushed red pepper flakes

1. Place pizza crust on baking sheet; top with pizza sauce, 1 cup of cheese, pepper strips and olives.  Sprinkle remaining cheese and pepper flakes over pizza.

2. Bake in a preheated 450°F oven 8 to 10 minutes or until crust is golden brown and cheese is melted.  Cut into 6 wedges.

Cheddar, Bacon & Potato Frittata


Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 4

4 slices bacon, diced
2 cups (8 oz.) frozen hash brown potatoes with peppers and onions, thawed
6 eggs
¼ cup milk
½ tsp. salt
1 ¾ cups (7 oz.) Sargento® Bistro Blends Cheddar Salsa with Tomato and Jalapeño Peppers Shredded Cheese, divided

1. Cook bacon in a 10-inch nonstick skillet over medium heat until crisp.  Using a slotted spoon, transfer bacon to a paper towel; set aside.  Pour off all but 1 tablespoon of the drippings.  Add potatoes to skillet; cook 2 minutes, stirring occasionally.  Preheat broiler.

2. Beat eggs in a medium bowl.  Stir in milk, salt and 1 cup of cheese.  Add egg mixture to skillet; stir to combine.  Cover; simmer until eggs are set on the bottom, 6 to 8 minutes (center will be wet).

3. Uncover; top with reserved bacon and remaining cheese.  If skillet is not ovenproof, wrap handle in foil.  Transfer skillet to broiler; broil 5 to 6 inches from heat for 2 to 3 minutes or until eggs are set and cheese is melted.  Cut into 4 wedges.
