Asparagus Potato Brunch Frittata
Prep time: 10 min
Cook time: 20 min
1 cup onion, chopped
1/2 tsp basil, crushed
2 tsp oil
1 cup ham, diced cooked
1 can (14-1/2 oz.) DEL MONTE® Whole New Potatoes, drained and chopped
1 can (15 oz.) DEL MONTE® Extra Long Asparagus Spears, drained
1 cup Swiss cheese, shredded
4 eggs, beaten
Cook onion and basil in oil in 10-inch skillet until tender. Add ham and potatoes; cook 2 minutes.
Arrange asparagus on top and sprinkle with cheese.
Blend 1/4 cup water into eggs. Pour into skillet. Cover and cook on medium heat, 6 minutes. Uncover and cook 5 minutes or until set. Cut into wedges.
Peachy Maple Pecan Waffles
Prep time: 5 min
Cook time: 5 min
1 can (15-1/4 oz.) DEL MONTE® Sliced Yellow Cling Peaches In Heavy Syrup
4 (about 4 oz.) ham, thin slices cooked (optional)
4 frozen waffles, thawed
1/4 cup pecans, toasted
1/4 cup Maple-flavored syrup
Drain peaches, reserving 1 Tbsp. syrup. Combine peaches, ham and reserved syrup in medium skillet. Cook and stir until heated through.
Prepare waffles according to package directions.
Spoon ham-peach mixture over waffles. Sprinkle with pecans and serve with warmed syrup.
Breakfast Express Smoothie
Prep Time: 5 min
Cook Time: 0 min
2 cans (15 oz. each) DEL MONTE® Lite Yellow Cling Sliced Peaches
2 ripe bananas
1-1/2 cups DEL MONTE® Pineapple Juice
1 cup low-fat plain yogurt
8 to 10 ice cubes
Combine all ingredients in blender container. (It may be necessary to blend in 2 batches).
Cover and blend until smooth.
