2 lbs ground beef or turkey, browned & drained
1- 28 oz can + 1- 15 oz can diced tomatoes
1 28 oz tomato sauce
4 cups green peppers, diced into small pieces
1 cup onion, diced into small pieces
1 small can beef broth
2-3 C. cooked rice
5-6 Qt. crock-pot
Brown & drain beef (or turkey), then add to crock-pot. Add remaining ingredients, except for rice. Cook on high for 3-4 hrs or on low for 6-7 hrs.
To serve: Add ¼ cup cooked rice into a bowl then ladle the soup over top. Add cornbread to round out the meal.
**Note: This recipe makes a lot of soup. It can easily be cut in half with no problems. The cooking time will remain the same.
The soup, without the rice, can be frozen.
