Meatballs for Your Microwave

Meatballs microwave exceptionally well and turn brown after a short standing time, so they need no special browning. These recipes are good examples of favorite ways to cook meatballs. However, it is not at all difficult to adapt your own favorite recipes; just be sure to plan for the standing time.


Basic Meatballs

POWER LEVEL: High (10)
MICROWAVE TIME: 8 to 11 minutes, total

1 lb. ground chuck
1 egg
1/2 cup fine bread crumbs
1 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper

Mix together beef, egg, crumbs, salt, paprika and pepper. Shape into 12 balls and arrange in a circle in 9 or 10-in, pie plate. Cover with wax paper. Microwave at High (10) 8 to 11 Minutes until done, rotating plate 1/2 turn after 5 minutes.

Makes 12 meatballs

VARIATIONS:
Add one of the following flavor combinations:
1 tablespoon Worcestershire sauce and 1/4 cup chopped onion
1 tablespoon steak sauce and 1 clove crushed garlic (or 1/2 teaspoon garlic powder)
1 tablespoon chili sauce and ¼ cup finely chopped green pepper
2 tablespoons red wine and 1 teaspoon oregano

Arrange meatballs in a ring around the edge of a 9 or 10-in, pie plate. Small meatballs form a double row.




Swedish Meatballs

POWER LEVEL: High (10)
MICROWAVE TIME: 19 to 25 minutes, total

2 lbs. ground chuck beef
2 cups soft bread crumbs
1/2 cup milk
1 egg
1 pkg. (1/2 of 2 3/4-oz. box) onion soup mix
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 tablespoons unsifted all-purpose flour
1 cup milk
2 tablespoons brown bouquet sauce
1 cup dairy sour cream (8-oz.)

Mix together beef, crumbs, milk, egg, soup mix, salt and nutmeg. Shape meat mixture into 40 balls. Cook 20 at a time in 13x9x2-in. dish. Cover with wax paper.

Microwave at High (10) 7 to 9 Minutes, rotating dish half turn after 4 minutes. Remove meatballs from dish and keep warm, reserving meat drippings. Repeat.

To 1/4 cup drippings in dish, add flour, stirring until smooth. Gradually stir in milk and brown bouquet sauce. Microwave at High (10) 4 to 5 Minutes, stirring every minute, until thickened. Add sour cream. Stir well. Return meatballs to dish, mixing to coat evenly. Microwave at High (10) 1 to 2 minutes, until hot. Serve over noodles or rice.

Makes 40 meatballs (1-in.)


Meatballs in Onion Broth

POWER LEVEL: High (10)
MICROWAVE TIME: 34 to 40 minutes, total

2 pounds very lean ground veal, pork and beef mixture
1 medium onion, finely chopped
2 eggs
2 tablespoons flour
2 tablespoons dry onion soup mix
1 teaspoon salt
1/4 teaspoon pepper
Boiling water
2 bay leaves
2 tablespoons dry onion soup mix
1 teaspoon salt
1 teaspoon brown bouquet sauce (optional)

In medium bowl mix together ground meat, onion, eggs, flour, soup mix, salt and pepper. Form into medium-sized balls (up to 1/4 cup per ball). Set aside.

Into 3-qt. casserole pour 4 cups boiling water. Add bay leaves, soup mix, salt and brown bouquet sauce. Carefully add meatballs. Add more boiling water if needed to cover.

Microwave at High (10) 30 to 35 Minutes, stirring after 15 minutes. Thicken broth if desired.

To Thicken Broth: Remove meatballs from broth and keep warm. Into hot broth in dish, stir mixture of 1/4 cup cornstarch and 1/4 cup water. Add additional dry onion soup mix for onion gravy. Microwave at High (10) 4 to 5 minutes, stirring every 2 minutes.

Makes 16 to 18 meatballs
