Delicious, Stress-Free Dinners for Busy Shoppers
Chicken & Rice Skillet Dinner
When you're busy buying presents, entertaining the kids and preparing the house for the relatives, it's
no wonder the last thing on your mind is what to make for dinner. One-dish meals, which use items from your pantry and cook
quickly in a single pot or pan, are perfect for those very hectic days. Just toss together the ingredients, then cook and serve.
With the holidays approaching, one-dish dinners fulfill our desire to share a delicious home-cooked meal with family and friends.
During the hectic holiday shopping season when there is less time to prepare meals (but you don't want to resort to fast food),
stock up your pantry and freezer during your next grocery store trip. Make sure you have a supply of canned beans, diced tomatoes,
tomato sauce or spaghetti sauce, salsa, tuna and a variety of shredded and sliced cheeses. Condensed soup, fruit, chicken and beef
broth, dried pasta, rice, flavored vinegars, instant biscuit and cornbread mixes, onions and potatoes are also good choices. In the
freezer, you'll be glad to fall back on stashes of bagged vegetables, ravioli or tortellini, boneless, skinless chicken breasts and
prepared pizza and pie crusts.
4 (1 lb.) boneless, skinless chicken breast halves, cut into strips
2 Tbsp. oil
2 cups sliced zucchini or 1 pkg. (16 oz.) frozen vegetable blend
1 jar (16 oz.) medium salsa
1 1/2 cups instant rice
1/2 cups (6 oz.) Sargento Taco Blend Shredded Cheese
Cook chicken in hot oil in large skillet over medium-high heat 5 minutes or until cooked through, stirring frequently.
Add zucchini, salsa and 3/4 cup water. Heat to a boil; cover and simmer 5 minutes. Reduce heat; stir in rice. Top with cheese. Cover and cook 5 minutes.
Chicken and Rice Skillet Dinner uses ingredients from your well-stocked pantry and is a delicious meal that's perfect for cold evenings when preparation time is at a premium. Chock-full of strips of chicken, tender rice, sliced zucchini, salsa and a blend of shredded cheeses, it is sure to please the entire family. Just think - in a matter of minutes you'll be able to get on with baking cookies, shopping for gifts, attending parties, signing holiday cards and wrapping presents. A bonus: It's a one-dish wonder, so cleanup's a cinch.
