IMAGE Minty Shamrock Brownies with Ice Cream

1 box brownie mix
1 (10 oz) bag Andes Creme de Menthe Baking Chips
Shamrock cookie cutter
Mint Chocolate Chip ice cream
jelly roll baking pan

Preheat oven to 350°.

Prepare brownies as directed on box.

Lightly grease jelly roll pan. Pour brownie batter onto pan. Spread batter out to cover the entire pan. Bake for 10 - 15 minutes or until the center of the brownies are no longer soft and gooey. Do not over bake. Remove from oven and allow to cool for 5 minutes. (Be careful. Pan might still be hot) Using the Shamrock cookie cutter, cut out Shamrock brownies and place them on another baking sheet. Cover the top of each brownie with Andes Crème de Menthe Baking Chips. Place brownies back into oven for 2 minutes to melt the chocolate. Cool brownies completely before removing from baking sheet.

Serve brownies alongside a scoop of Mint Chocolate Chip ice cream.
