This week’s recipe was submitted to us by 7 & 1/2 year old Andy in North Carolina. Andy's Mom says "This recipe was really easy to make and he had a really good time. Now he is saying that he wants me to start teaching him how to cook more things. If I can get him to clean up afterwards, maybe I can actually take a night off from cooking once in a while!!".
Sunshine Smoothy Pops
Tools needed:
Blender
1 cup measuring cup
1/2 cup measuring cup
Either plastic popsicle molds-this is what Andy used.
OR
12 3oz. paper cups, plastic wrap and popsicle sticks.

Ingredients:
6 strawberries
1 medium banana
4 ice cubes
1 cup Strawberry yogurt
1/2 cup milk
1/2 cup fruit juice --Andy used orange juice
Instructions:
Cut strawberries and banana into small pieces. Mix all ingredients in a blender until smooth. Pour into popsicle molds. If using the paper cups, fill cups and cover with plastic wrap. Insert popsicle stick into plastic.
Freeze for at least 5 hours.
Prep time: 8 minutes Serves: 8 in plastic molds or 12 in paper cups
Credit: Andy came up with the idea of making smoothie pops while drinking one of his mother's smoothies. He loves popsicles and asked if he could try freezing it. The first attempt at freezing it in a dish turned out pretty well so we tried the popsicle molds the next time. He is now working on different mixtures of fruits and juices for his next batch.
