This week’s recipe was submitted to us by 8 year old Lindsey in South Carolina. As you can see, Lindsey enjoyed making this recipe - she enjoyed it enough to share it with you!
Easy Fresh Fruit Pie
Tools needed:
1 cup measure
3/4 cup measure
spoons
fork
blender(chopper)
bowl
pie pan
sauce pan
Ingredients:
1 large box strawberry jello
1 large box cook and serve vanilla flavor pudding mix
water
1 sleeve graham crackers
1/2 cup oleo
1/4 cup sugar
2 quarts fresh strawberries
1 container Cool Whip
Instructions:
Make crust by crushing 1 package of graham crackers. Add sugar and melted oleo to make coarse crumb mixture. Put in a pie pan sprayed
with cooking spray. Use a spoon or bottom of measuring cup sprayed with cooking spray to press crumbs to form crust. Bake 4 or 5 minutes
in 350 oven. (In a crunch for time? Use a ready made graham cracker pie crust!)
Put large pkg of Jello and cook and serve vanilla pudding mix in sauce pan with 1 3/4 cup water.
Cook until thick and translucent.
Place strawberries in pie crust after removing stems with large end down. Place very close together. Pour glaze over berries to top of pie.
Cool and cover with cool whip.
Prep time: 30 min
Serves: 12
Notes: Can use prepared crust but kids enjoy crushing the crackers and making crust if you have time.
Can use other kinds of fruit and jello gelatin flavors, sush as peaches, plums, nectarines and blueberries.
To make this a healthier dessert for those watching their sugar intake you can use sugar free gelatin and pudding mix.
