This week's recipe was submitted to us by 4 year old Micah in Nicholasville, Kentucky. Micah's Mom says, "Growing up, my mom used to make
these delicious doughnuts for us. They are SO EASY, and my son loved popping out the holes and coating them in cinnamon. After making these,
I asked how my kids like them. My 5 year old said, 'Can we make these every day?' I'm certain we won't... but I like them about that much too!"
Micah's 'Homemade' Doughnuts
Tools needed:
Skillet or Frying Pan
Apple Corer
1/4 measuring cup
teaspoon
Ingredients:
1 package refrigerated buttermilk biscuits
1/4 C. sugar
4 t. cinnamon
Vegetable oil
Instructions:
1) Fill frying pan to two inches of oil. Heat over medium high heat.
2) Take biscuits from package, and lay out seperately. Using an apple corer, make a small hole in the center of each biscuit and pop the small hole out, thus creating your doughnuts and doughnut holes! (if you do not have an apple corer, simply use another SMALL round object, like the lid off of your vanilla bottle!)
3) In a shallow bowl, mix sugar and cinnamon.
4) When oil is heated, place five doughnuts in, turning over when the bottoms begin to get light brown, this will only take a minute or two. When the second side is brown, remove from the pan, DIRECTLY into the cinnamon sugar mixture, coating on both sides.
5) Enjoy! These are best eaten while warm.
OPTIONAL:
This time we tried a chocolate glaze. Make the doughnuts the same way, but instead of coating in the cinnamon sugar, coat in chocolate glaze and then use some seasonal sprinkes! YUM!
Chocolate Glaze (found on the internet):
Mix together 2 oz semi-sweet chocolate chips, 1/2 T. vanilla, 1 T butter, 1/8 C. boiling water, and 1 C. confectioners sugar.
Prep Time: 5 minutes
Serves: makes 10 doughnuts and 10 doughnut holes
