We've turned everyone's favorite chocolate
covered strawberries into an easy chocolate
covered strawberry cookie that kids can make
with very little help. These sweet cookies make
great Valentine's Day treats.
Ingredients:
1 box strawberry cake mix
2 eggs
¼ C. oil
chocolate icing
vanilla icing
plastic baggie or icing bag with
small writing tip
pink and red sugars
Directions:
Combine all ingredients and mix at low speed until
moistened. Drop by rounded tablespoonfuls 2" apart
onto un-greased cookie sheets.
Bake at 350° for 9-12 minutes. Cool cookies on pan
for about 2 minutes. Remove from pans to cooling
racks and allow to cool completely before icing.
Once cool, spread chocolate icing to within an 1/8 inch
of the edge of each cookie. Add vanilla icing to baggie
or icing bag. If using a baggie, carefully snip the very end
of one corner of the bag to use as an icing bag. Decorate the
tops of the cookies with swirls, hearts, arrows, names...etc.
Sprinkle pink or red sugar on top of the cookies, if desired.
