Ingredients:
2 cups onion, chopped
1 cup celery, sliced
1/4 cup butter or margarine
1 can (14-1/2 oz.) College Inn® Organic Chicken Broth
1 can (14-1/4 oz.) Del Monte® Organic Whole Kernel Golden Sweet Corn, drained
1 can (7 oz.) green chilies, diced, drained
3 Tbsp. parsley, chopped
1/2 tsp. poultry seasoning
1/2 tsp. salt
1/4 tsp. oregano
6 cups dry cornbread stuffing crumbs
1/2 cup pecan pierces, chopped
Directions:
1. Cook onion and celery in butter in large Dutch oven until tender
2. Stir in chicken broth, corn, chilies, parsley, poultry seasoning, salt and oregano; mix well
3. Add cornbread crumbs and nuts; toss to moisten evenly
4. Spoon into covered casserole and bake at 350?F, 30 minutes or until heated through, or use to stuff 12 to 15lb turkey

Ingredients:
1 can (15-1/4 oz.) Del Monte® Organic Whole Kernel Golden Sweet Corn
1/4 cup butter or margarine, melted
2 cups all-purpose biscuit baking mix
1/3 cup dry non-fat milk
3 Tbsp. sugar
1 cup shredded Cheddar Cheese (substitute for organic)
1 egg beaten (substitute for organic)
Directions:
1. Drain corn reserving liquid; add 2/3 cup liquid to melted butter.
2. Combine biscuit mix, dry milk and sugar
3. Stir in corn and cheese; add liquid ingredients and egg; blend lightly
4. Fill greased muffin pan 2/3 full. Bake at 400?F for 25 minutes. Remove from pan immediately
