Wisk together eggs, milk, vanilla, and sugar. Melt 2 tsp butter in a heavy skillet over medium heat. Working with 2 pieces of bread at a time, soak bread in the egg mixture until saturated. Fry bread slices on both sides until golden brown. Remove from pan and lay on a baking sheet. Use the heart cookie cutter to cut out 1 heart from each slice of French toast. Discard crust. Keep warm in oven set at 200* or lower. Continue until all 8 pieces are done.
Making Berry Filling:
4 oz. Cream Cheese
2 TBSP Confectioner’s Sugar
1/2 tsp. Vanilla
1/4 tsp. Almond Extract
1/4 C. frozen berries, thawed
Using an electric mixer, cream together cream cheese, confectioner’s sugar, vanilla, and almond extract. Stir in berries and mix well.
Making Berry Syrup:
6 oz Frozen Mixed Berries
3 TBSP Maple Syrup
1 tsp. Lemon Juice
2 tsp. Sugar (+ 1 tsp if needed)
In a medium sized pot, heat fruit, syrup, lemon juice, and sugar over
medium heat until everything is well combined. Cook for 1 to 2 minutes
until mixture starts to thicken a bit.
Spoon over French toast.
To Assemble Stuffed French Toast:
Spread berry filling on one heart toast and lay on a plate. Top with a second heart. Spoon warm berry syrup over all.
