IMAGE Lemon Berry Angel Food Roll

Mom will think that you've spent all day in the kitchen baking when you present this pretty cake roll. It will be your little secret that it's really quick and easy to make!

Cake:

1 Box Angel Food Cake Mix
Confectioner's Sugar
1 Can of Lemon Pie Filling
4 OZ Cream Cheese, softened
1/3 C. Lemon Juice

Berry Sauce:

1 C. Frozen Berry Mix, thawed
1 C. Sugar
2 TBSP Lemon Juice

To Prepare Cake Roll:

Preheat over to 350°

Lightly spray a 15" x 10" x 1" baking sheet with cooking spray, then line with waxed paper.

Prepare cake as directed on box. Spread cake batter in baking pan. Bake for 15 -20 minutes or until the cake is light golden brown and springs back when touched. Immediately invert onto a towel that has been dusted with confectioner's sugar; gently peel off waxed paper. Starting at the short side of the cake, roll cake and towel up together into a roll. Cool completely on wire rack.

Unroll cake roll and spread lemon filling* over entire cake. Roll back up without the towel, then wrap in plastic wrap. Refrigerate for at least 3 hrs. or freeze. Allow 30 minutes to thaw before slicing. Spoon berry sauce* over cake roll slices.

To Prepare Filling and Berry Sauce:

Lemon Filling: Using an electric mixer, blend together lemon pie filling, cream cheese and lemon juice. Mix well until really smooth. If needed, add 1 tsp at a time more of lemon juice to the mix until an easily speadable consistency is achieved. Chill filling until the cake roll is cooled.

Berry Sauce: In a saucepan, stir together thawed berries, sugar and lemon juice. Heat over medium heat just until sugar has dissolved. Remove sauce from the heat. Can be served warm or cold.
