These light and airy cupcakes are the perfect addition to a Kwanzaa buffet table.
Ingredients for cupcakes:
1 box white cake mix and ingredients needed to make cake
2 tsp coconut extract
Ingredients for butter cream icing:
1/2 C. butter, room temp.
1/2 tsp. clear vanilla
3 C. powdered sugar
2 TBSP milk
shredded sweetened coconut for topping
To make cupcakes:
Preheat oven as directed on cake mix box. Prepare cupcake pans using cupcake liners or use silicon baking cups.
Prepare cake mix as directed, adding 2 tsp coconut extract to the mix. Fill the cupcake holders no more than ¾ full. Bake as directed. Allow to cool completely before frosting with butter cream icing (below).
To make icing and decorate cupcakes:
Whip butter with an electric mixer until light and fluffy. Mix in vanilla. Alternate the powdered sugar with milk, mixing until the frosting is fluffy.
Frost cupcakes and top with shredded coconut.
