Quick and Easy Stir Fry Dinner

Shrimp Stir Fry

1/3 cup uncooked white rice
1 tsp. dark sesame oil
3 ounces frozen, peeled, deveined shrimp, thawed
1 cup sweet red pepper strips
1 cup snow peas, strings removed
1/3 tsp. ground ginger
1 tsp. cornstarch stirred into 1/2 cup chicken broth
1/4 cup chow mien noodles

Cook rice according to directions.

About 5 minutes before rice is done, heat a large, heavy nonstick skillet until very hot. Add oil and tilt to coat skillet. Add shrimp and stir until shrimp are just warm. Add pepper strips, snow peas and ginger. Cook, stirring, until vegetables just begin to soften, about 2 minutes. Stir in broth mixture and stir fry 1-2 minutes until sauce thickens and vegetables are tender.

Spoon over rice; top with noodles.

Thnks for a great recipe.Could you use some other kind of meat to change it up?

A nice cool summer dessert!

Cherry Burgundy Dessert

1- 3 oz pkg, cherry gelatin
1 cup boiling water
1/2 cup port wine
1/4 cup cold water
1- 8 3/4 oz can sliced peaches, drained
dash of cinnamon
1 cup cool whip, thawed

Dissolve gelatin in boiling water. Add wine and cold water. Chill till slightly thickened. Stir in peaches. Pour into individual molds and chill at least 4 hours or till firm. Stir cinnamon into cool whip. Unmold geltin and garnish with additional peaches and spiced cool whip. Makes 4 servings
