This is actually not just low fat, but fat free. Top it with whatever fruit sauce you want.

1 envelope unflavored gelatin
3/4 cup cold water
2/3 cup sugar
1 cup fat free sour cream
1 tsp vanila
2 cups fat free cool whip

FRUIT SAUCE

1 (10 oz) pkg. frozen raspberries or blueberries (or whatever fruit you want to use) in syrup, thawed
1 tbsp cornstarch
1 tbsp sugar

In a pan sprinkle the gelatin over the cold water and let stand 1 minute. Add sugar and cook and stir over low heat till gelatin and sugar are dissolved. Remove from heat and whisk in sour cream and vanilla. Pour into a 4 cup mold that has been coated with nonstick cooking spray. Refrigerate till firm. For the sauce drain fruit and reserve the syrup and set berries aside. Add enough water to syrup to measure 3/4 cup. In a pan combine cornstarch and sugar. Stir in syrup mixture till smooth. Bring to a boil and cook and stir 2 minutes or till thickened. Remove from heat and stir in berries. Refrigerate till serving time. Unmold and top with sauce. 8 servings
