I like to do this with regular potatoes, but it is a nice change of pace using sweet potatoes once in a while~!
3 pounds sweet potatoes, peeled and cubed
2 tbsp olive oil
3 tbsp brown sugar
1 tsp cajun seasoning
1/2 tsp salt
1/4 tsp cayenne pepper
In a large bowl turn the sweet potaotes in the oil. Arrange on a 15 x 10 x 1" baking pan in a single layer. Bake at 450 degrees for 20 minutes. Combine brown sugar,cajun seasoning, salt and cayenne and sprinkle over potatoes. Bake 5-6 minutes longer or till tender. 6 servings
