Haven't made this one yet, but going to have it for supper, thought I'd go ahead and share it as it sounds really good~!


1 pound boneless skinless chicken breasts, cut into strips
3 tbsp lemon juice
2 garlic cloves, minced
2 tbsp oil
2 large sweet red peppers, julienned
2 lare sweet yellow pwppers, julienned
1 large onion, halved and sliced thin
2 tsp minced fresh oregano
1 tsp ground cumin
1/2 tsp pepper
1/2 tsp crushed red pepper flakes
3 tbsp minced fresh parsley7

Sprinkle chicken with lemon juice and set aside. In large skillet saute garlic in oil add peppers, onion, oregano, cumin. pepper, and pepper flakes. Reduce heat and cover and simmer 10 minutes. Add chicken and cover and simmer another 10 - 15 minutes or till vegetables are tender and chicken is cooked. Sprikle with parsley. 5 servings

I will, I think what drew me to this recipe is I have more chicken tenders I need to use and I have peppers ready in the garden!

Cool. I've got chicken in the freezer, so I cannot wait until you make this and give us a report.

The chicken turned out quite well, I think it's a keeper! I doubled the garlic, pepper and red pepper flakes. Not a dish that takes too long to prepare; my kind of a dish! LOL

Cool. I'm like you, I would add more of those good things. Another one I'll have to try.
