Greens, Eggs, and Ham

Serves 2

Ingredients
¼ onion, diced
1 clove garlic minced or pressed
2 cups fresh spinach leaves
4 ounces cooked ham or Canadian bacon, diced
1 T olive oil, 1 T butter
6 whole eggs, beaten
2 ounces cream cheese, cut in ½ inch cubes
salt pepper
Directions
<LI class=list_1>Heat oil and butter in a skillet. Saute onion and garlic until translucent; do not burn <LI class=list_1>Add spinach leaves and wilt <LI class=list_1>In a bowl, beat the whole eggs, add salt, pepper, diced ham, and cream cheese cubes. Add the egg mixture to the sautéed ingredients in the skillet and cook over medium to medium high heat, gently turning the eggs as the cheese melts.

You surprised me on this one! When we do "green eggs" we actually color the egg whites wiuth green food coloring, because DH can't eat the yolks, so end up with colorful eggs all the time! LOL

I make mine like Cat, but I like the idea of adding spinach!

LOL yeah when i came across the recipe I thought it would have green food coloring in it. Too bad I don't have any spinach on hand at the moment. I really want to try this

Does the spinach get slimy?(that is the way DH describes canned spinach; he'll eat it fresh in salads, but so far no other way). If it stays somewhat leafy I bet I could get him to try this one!

well, to me its not slimy at all. You do wilt the spinach in with the onions before you pour the rest of the mixture in. But you dont have to leave it in long at all before you mix everything else in with it. To me, it did not have a consistency anywhere close to canned spinach
