View Full Version : Carbquik Blueberry Muffins

I made these tonight and they were really good. Not overly sweet, but sweet enough. The Carbquik isnt quite like regular flour or Bisquik, so the consistency of the muffins were not totally muffin like, but a wonderful close substitute for us Diabetics watching sugar and carbs. (And no spikes in glucose levels!)
CarbQuik Blueberry Muffins
Servings: 6
2 cups CarbQuik
2/3 cup half and half or same amount of butter milk (my preference)*
1/2 smashed very ripe banana
1/3 cup Splenda
1 tsp double acting baking powder
2 tablespoons vegetable oil**
1 whole egg, beaten
3/4 cup blueberries, frozen, thawed and drained
*I used fat free half and half in place of regular half and half
**I used olive oil in place of vegetable oil
Heat oven to 400º F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
Stir all ingredients except blueberries just until well moistened. Gently stir in blueberries. Divide batter evenly among cups. For a full large muffin, fill to the very top of muffin cup.
Bake 13 to 18 minutes or until golden brown.
Per Serving 152 Calories; 10g Fat 6g Protein; 10g Carbohydrate; 6g Dietary Fiber; Net Carbs 4g
*Nutritional information based on the recipe as posted, not on recipe with my substitutions
**** Note. Do not allow batter to be to runny or smooth, a few lumps are fine

Yummy, where do you get CarbQuick? I have looked at my Walmart and Albertson's and haven't been able to find it. Can you make your own or order it? Thanks.

I also would like to know if there is a way to make it in a pinch. I know Bisquick can be homemade, so I wonder if this can be homemade too.

I never bought from this company so I don't know that; does anyone else out there know?
Somewhere there was a discussion on making this from scratch, but I don't think anyone ever came up with it?

Yes, you can use bisquick for anything that you use Carbquick in, and vice versa. I use Carbquick just mainly because of the low carb thing.
Carbquick unfortunately cannot be made yourself since it is made with a process that reduces the carbs in the mix by 90%.
You can use carbquick in most things in place of regular flour, and in anything in place of Bisquick. The consistency is a tad different than Bisquick so it will alter the texture of some things a bit. It is still an awesome product that will allow us low carbers to have breads, muffins, cakes, dumplings.
I have used the Carbquik so far in blueberry pancakes and in the blueberry muffins. I have heard they make excellent biscuits. Can't wait to try those!
I have several carbquick recipes and Bisquick recipes if anyone would like me to post more.

They are an excellent company and have some great hard to find low carb products, as well as low fat and low sugar items. Shipping is $5.00 per order, regardless of the size or weight of the order, which is a fantastic deal on shipping. (IMHO) They have quick delivery, also. About 3 business days. (I'm not affiliated with them or trying to push thier site, just giving my opinion on the service in my experience, in case anyone is interested.) It is very hard to find low carb products in my area.
The Carbquick comes in 1 pound boxes, 3 pounds bags (I think, anyway) and 5 lb bags.
You can also go to the Carbquik website and use the store locator to see if any stores in your area carry the product. MOST Sam's Clubs do carry it, if you have one near you. (They only carry the 5 lb bags though, I think) Carbquick is made by Tova Industries and they also make a fantastic low carb flour called carbalose, which is part of the Carbquik mix. You can buy just the carbalose flour, also. I just got a Sam's card and will be buying my Carbquick there, from now on.
I've probably given you all way more info than you wanted. :p I'm goingto post this and in a minute I will edit it and post the website for the Carbuick and Carbalose, with the store locator.

Another good thing, others who I've talked to who have used this product on a regular basis see no big spikes in glucose and no stall on thier weight loss. I have only used it twice, so far, but can confirm that it does not spike my glucose levels.

Yummy, thank you for the information. I have been burned by online places, so I always like to check to make sure they are legit by someone who has ordered from them. Even when I am not dieting, I am not supposed to have sugar because of my hypoglycemia. I noticed that they have quite a few products that are sugar-free. If I ever have any questions about any of them, I will ask, if you do not mind. Some of those sugar-free foods are really and some are really gross.
It is also good to know about the store locator. Las Cruces is a lot larger than Carlsbad and they may have a bigger chance of carrying it.

Good luck finding a store locator that sells the Carbquick. It is worth a try for anyone low carbing.
By the way, carbquick works great in those wonderful old Bisquick "Impossible" Recipes!
