This recipe comes from the California Avocado Commission
2 pounds avocados
¼ cup lemon juice
2 2/3 roasted garlic heads
1/3 tbsp chopped garlic
1/6 cups chopped parsley
1/3 tbsp dried oregano
1/3 tbsp salt
1/3 tsp coarsely ground black pepper
Roughly mash avocado. (Texture should not be smooth.) Fold remaining ingredients into avocado. Chill 1 hour to blend flavors.
Serve with fried vegetables, chicken wings or use as a topping for grilled meat, poultry, fish or egg dishes. 20 servings
