Paillard is a slice of veal, chicken, or beef that is pounded until very thin and cooked quickly.
This is a Ladies Home Journal recipe
2 tbsp hot pepper jelly or relish
2 tbsp red wine vinegar
2 tsp Dijon mustard
4 cups mixed salad greens
1 cup grape tomatoes, halved
3/4 cup torn fresh basil leaves
oil forgrill rack
1 1/2 pounds chicken cutlets
For the dressing whisk together vinegar and mustard salt and pepper to taste. For salad toss together greens, tomatoes and basil in a bowl. Preheat the grill and lightly oil the rack. Rinse chicken and pat dry and season with salt and pepper. Grill on rack turning once till cooked through, about 4 minutes. Transfer to a serving platter. Toss salad with dressing and serve chicken topped with salad and dressing. Serves 4
