What are some of your recipes that you use and you know everybody likes that you don't hesitate to throw together? It might be a quickie throw together or even something that takes a lot of time to prepare, but you know your family will enjoy.
Here's one of ours; it originally came to me from my great,great aunt.
Aunt Lib's No "Peek" Chicken & Rice
1 cup uncooked rice
1 chicken, cut in serving pieces
1 can condensed cream of mushroom soup
1 soup can of water
1/2 pkg. dry onion soup mix
Butter a 16 x 11" pan. Sprinkle rice over bottom of pan. Lay chicken skin side up on rice. Mix soup and water together and pour over chicken. Sprinkle onion soup mix over all. Cover tightly with foil making sure all edges are sealed. Bake at 375 degrees for 1 1/2 hours and don't "peek":eek: or the rice will burn. 6 servings

This is a dish my kids love thoug it is mainly a cold weather dish,it doesn't have a name;
1can of chili[I use hormal]
1can ranch style beans
1 can rotel tomatoes [I use the mild]
1 small can of cream
1 cup of grated chedder cheese
corn chips
mix chili,beans ,rotel tomatoes togather in sauce pan heat up til hot,then add cream and cheese stir until cheese is melted.Wacth carefully as it will stick if you're not careful. Each person put crush corn chips in their bowl then pour chili mixture over them.
A old man gave this recipe to my mother when I was young and we had a food store. Hope you like it.

Nell, this sounds similar to a Spanish casserole that I make except I add ground beef to mine.

I,ve eating this dish since I was around 10 or 11. My mom had to cook at the store on a hot plate. Also most people around here keep this stuff on hand all the time so its handy when the food supplies are low and so is the money.lol

I'd love the recipe for the Spanish casserole, DeBora...
I do a similar dish with the chilli on tortilla chips but I sprinkle the cheese on top and bung it under the grill or pop it in the oven.

Here's my recipe for Spanish Casserole (http://www.momsmenu.com/forums/showthread.php?t=343&highlight=spanish+casserole). I use Fritoes, but you could also use tortillas. I like it because it is easy to prepare.

My family loves when I made chile and put it over taco chips and melt cheese over it. It is easy and fast to make and my family acts like i slaved over the stove all day.
They also like when I make a form of spanish rice.

I am planning on trying chili with black soy beans soon. I cannot wait to see how that comes out.

Here is a soup we like that is quick and DeBora it has black beans in it, although they are not the black soy beans.
1 large onion, chopped
1 medium green pepper, chopped
4 garlic cloves, minced
2 tsp olive oil
1 can (16 oz) kidney beans rinsed and drained
1 can (16 oz) fat free refried beans
1 can (16 oz) black beans,rinsed and drained
1 can ( 14 1/2 oz) reduced sodium chicken broth
1 can (14 1.2 oz ) stewed tomatoes, cut up
3/4 cup salsa
2 tsp chili powder
1/2 tsp pepper
1/4 tsp ground cumin
In a large saucepan, saute onion, green pepper and garlic in olive oil till tender. Add remaining ingredients and mix well. Bring to a boil; reduce heat and cover and simmer 10 minutes. Makes 8 servings

This originally came to me from my grandmother, my family always loved it!
Mee-Mee's Baked Spaghetti
1 8 oz pkg. thin spaghetti
1 lge can mushroom pieces
1 tbps garlic powder or 3-4 cloves garlic, crushed
2 lbs lean ground beef
1 lge an crushed tomaotes
large wedge sharp cheddar cheese,grated
butter
paprika
Brown beef in skillet and break up into small pieces, add garlic, tomatoes, mushrooms and juice. Cook spaghetti broken into small pieces according to lkg directions. Rinse and set aside. Cook beef mixture on low heat for 1 1/2 hours. In large baking pan add drained spaghetti. Pour beef mioxture over it and mix together with 3/4 cup of the cheese. Put rest of cheese on top and dot with butter and sprinkle with paprika. Bake at 350 degrees till brown on top and bubbly.
Thought I would try this thread. As I no longer have to cook for a family I don't try lots of recipes, but this is my favourite soup, having been making it for 57 years. It makes a large quantity and freezes very well.
1 Lamb Shank - cover with water, add 2 teaspoons salt, 1/2 teaspoon pepper, 3 tablespoons soup mix or split peas or barley. Bring to boil, simmer for about 1 hour. When cool, remove any fat that has settled.
Grate 1 large potato, 1 carrot, 1 parsnip, 1 tomato, about 4 sticks of celery, 1 large onion, 1 piece of pumpkin (about the size of the potato.)
You can add any vegetables you have on hand. Swedes, corn, etc.
Boil for a further 1 hour.
Also add 2 tablespoons of tomato sauce and 1 tablespoons of worcestershire sauce or some bbq sauce.
Shank can removed and eaten as a meat dish with parsley sauce. I usually leave mine in and shred it into the soup. This is great in the cold weather. Marj

Cat lover - Swedes are a vegetable a bit like a turnip. They can be white or yellow. I don't like them so do not use them.
PARSLEY SAUCE.
I often make this in the microwave but it is OK to make it in a sauceoan on top of the stove.
Melt 2 teaspoons butter.
Stir in 1 tablespoons plain flour.
Add 3/4 cup milk..
2 tablespoons chopped parsley
Salt and ground black pepper. (not too generous.)
Bring to boil, stirring to stop it from getting "lumpy."Simmer for 1-2 minutes.
I use the same recipe for cheese sauce - leaving out the parsley and adding 3/4 cup grated cheese. This is great over cauliflower or broccoli.
Parsley sauce can also be served with corned beef. Another variation is to add a teaspoon of mustard instead of cheese or parsley.

Thanks! I've never heard of swedes before, sorry! I wonder if we can get them here anywhere? DH LOVES turnips!

Swedes are more commonly called rutabagas in supermarkets here.
