This is a very popular dish, especially in Dublin, and has been so for many years. Although it is best made with a good stock - water in which a ham has been boiled, or even a ham bone - a light stock cube will substitute. This comes from the cookbook "A Little Irish Cookbook"

1 lb best sausages
8 oz streaky bacon
1 cup stock or water
6 medium potatoes
2 medium onions
salt and pepper

Cut the bacon into 1" squares. Bring the stock to the boil in a medium saucepan which has a well-fitting lid, add the sausages and the bacon and simmer for about 5 minutes. Remove the sausages and bacon and save the liquid. Cut each sausage into four or five pieces. Peel the potatoes and cut into thick slices. Skin the onions and slice them. Assemble a layer of potatoes in the saucepan, followed by a layer of onions and then half the sausages and bacon. Repeat the process once more and then finish off with a layer of potatoes. Pour the reserved stock over and season lightly to taste. Cover and simmer gently for about an hour. Adjust the seasoning and serve piping hot. Serves 4

Why is it called "best" sausage and "streaky" bacon?

This is a "true" Irish recipe and the best sausage is stated like that because each family has their own favorite tasting sausage and that is what they are referring to; just the "Irish" way of stating I guess you could say. LOL And the streaky bacon is referring to what we usually call a good marbleled bacon; one with equal fat and meat.

Copied, thank you! I was looking around on the net with my daughter
yesterday. We wanted to find a new and different St. Patrick's Day meal and I copied a recipe for Coddle. The only thing that was different was that the other one had parsley... maybe just to add a little green? :) In any case, we'll be making it!

I will indeed! I plan to serve it with Irish Soda Bread. (Well, might as well
go all out for the holiday, right?!) :) My daughter wants some frosted
shamrock cookies she saw in the grocery store, too.
