This is a wonderful pie if you love peanut butter; usually can only get it at the grocery Kroger's deli, not anymore!:eek:
4 cups graham cracker crumbs
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
2 cups confectioners' sugar
1 cup creamy peanut butter
2 cups whipping cream
Crushed peanuts or small Reese's peanut butter cups (optional)
Make the crust by mixing crushed graham cracker crumbs and melted butter together in a 9" springform pan. Press the crust up the sides of the pan. Place in freezer until ready to use.Beat cream cheese, confectioners' sugar and peanut butter until smooth. Whip the cream until it forms stiff peaks. Fold the whipped cream into the peanut butter mixture. Pour into prepared graham cracker crust. Garnish with crushed peanuts or small Reese's peanut butter cups, if desired. Place in the freezer until firm, about 1 hour.
