Ths is from the newspaper, but I didn't write which one when I copied this, but I'm almost sure it was in Louisville ,KY
2 quarts peeled and sliced peaches
6 cups sugar
Combine peaches and sugar in a large shallow glass container.
Cover and keep in a cool place for 12 to 18 hours.Transfer the peach mixture to a large pot, and slowly bring to a boil - stir often.Gently boil until peaches are translucent and the syrup thickens, stirring frequently to prevent sticking and skimming off foam with a spoon. Cooking takes about 1½ or 2 hours.Immediately, use a ladle or large spoon to put preserves into hot sterilized jars; leave ¼ inch at top of jars. Cover jar with lid; screw on bands very tight.Put jars in boiling water for 15 minutes.Cool, then label jar with contents and date.
Makes 3 quarts.
