This recipe comes from Prevention
25 chocolate wafer cookies,finely crushed
1 cup + 2 tbsp confectioners sugar
1/3 cup honey
1/4 cup + 2 tbsp smooth peanut butter
In a large bowl mix cookie crumbs and 1 cup of confectioners sugar. In a medium bowl whisk together honey and peanut butter till well combined. Add to the cookie crumb mixture and stir well; it may be crumbly. With your hands shape into 1" balls; it should hold together as you shape it. Set the balls at room temperature till ready to use or store in airtight container at room temperature for 2 to 3 days. Just before serving roll the balls in the remaioning confectioners sugar. Makes about 36
