This is a favorite at parties!

Armadillo Eggs

2 pounds jalapeņos, halved.
3 packages cream cheese, softened
3 packages bacon

De-seed the jalapeņos if you do not want them to be very hot
Fill with the cream cheese
Wrap the jalapenos with bacon and place on baking sheet

Bake at 375˚ until hot and bubbly.

Dh makes the that way and cooks them on the grill.

I have never made them over the grill, but that is a good idea. This is definately a Texas recipe. lol

Debora, here is the Armadillo egg recipe I have. Mine calls for using the carbquick but you can use flour or bisquick in place of the carbquik

Armadillo Eggs

Serving Size: 24


-= Ingredients =-

24 jalapeno peppers
1 pound hot spicy sausage meat
2 cups Carbquik (or may substitute flour or bisquick
1 (16 ounce) package Cheddar cheese ; shredded
1 tablespoon crushed red pepper flakes
1 tablespoon garlic salt
1 (16 ounce) package Monterey Jack cheese ; cubed
garnish with smoky flavor crushed bacon bits sprinkled on top

Preheat oven to 325 degrees F (165 degrees C).
Lightly grease a medium baking sheet.
Cut a slit in each jalapeno pepper.
Remove and discard seeds* and pulp.
In a medium bowl, mix sausage, Carbquik(or substitute), Cheddar cheese, crushed red pepper, and garlic salt.
Stuff jalapenos with the Monterey Jack cheese cubes.
Shape sausage and baking mix glop around the jalapenos to form balls.
Arrange jalapeno balls on the prepared baking sheet. sprinkle on the bacon bits
Bake 25 minutes in the preheated oven, until lightly browned.

Yummys girl these are something that I'lltry it sounds good.Debora my youngest sil on dh side made the peppers on the grill one year out in Lubbock where she,her dh and daughters lives.We like them so dh started making them also.

Yummy, I have never seen a recipe like this one. Sounds really good though.

Nell, those Armadillo Eggs are addictive! I always make ton so that I have enough for breakfast the next morning! lol

We always try to make enough for a couple of days but are lucky if they last at least one day. They never make it to breakfast.lol

Nell, I am lucky in that my DH doesn't like anything spicy! lol More for me! Now I cam craving them, so I got the stuff to make me some! lol

I can't eat alot of them but I still try to eat my share lol. dd isn't crazey about them but that doesn't stop her from eating a few. ds loves them, so our family goes for them.

Oh, I can eat 5-6 of them at one sitting. lol I wish it would cool off so I can make me some.

Dh can put away about 7 of them depending on the size and how hot they are. As for me maybe 4 or 5 also depending on size and how hot they are.I lost count on how many ds can eat,but he is a growing boy lol.Dd eats maybe 2 or 3, so as you can we have to cook alot of them.

My DS has hollow legs too, except he's stop growing. lol

They don't make a jalapeno too hot for me. lol I made myself some last night and they were sooooo good. When I make these for parties, I have to wear gloves because I usually make 2-3 pounds of the jalapenos. They never bothered my hands until the last party I made them for at school. The next day, my hands felt sunburned.

Last night I was washing my face in the shower and I forgot and rubbed my eyes! lol
