cooking spray
8 cups mashed potatoes, can use leftover potatoes
1 egg, lightly beaten
1 cup sour cream
1 cup small curd cottage cheese
5 green onions, finely chopped
1/2 cup shredded cheddar cheese


Preheat oven to 350 degrees and spray a 1 1/2-qt. casserole with cooking spray. In the bowl of an electric mixer, combine potatoes, egg, sour cream, cottage cheese and onions at medium speed. Spoon potato mixture into casserole dish. Sprinkle with shredded cheese and bake 30 minutes. Makes 10 servings

How does the cottage cheese affect the flavor of the potatoes?

You really don't even know it is in there, but it does something for them, it's just like when I make regular mashed potatoes I always add a couple of big spoons of FF mayonnasie; it makes a taste difference, but if you don't tell anyone they don't know it is in there, but I can tell the difference if I leave the out.

What I really like about this recipe is that you can make your mashed potatoes ahead of time refrigerate them and just assemble it later and you don't have all the mess of making mashed potatoes so I use this a lot when I have company for that reason.
