If you've never made menudo before, you need to know that it really stinks up the house during the cooking process. It doesn't smell bad after cooking though.
Menudo
2 pounds Tripe -- cut in 1" squares
1 teaspoon Cumin
14 1/2 ounces hominy
1 pound pork knuckles -- Raw
4 Cloves Garlic -- crushed
4 tablespoons Chili Powder
1 tablespoon Oregano
2 tablespoons Butter
salt and pepper to taste
Wash tripe in hot water and then boil with salt in three quarts of water for two to three hours or until tripe is tender.
In another saucepan, blend melted butter, garlic, cumin, black pepper, chili powder and oregano and saute for two to three minutes. Combine tripe, pork knuckles and the broth with the spices and one can of hominy. Bring to a boil and boil for five minutes.
Toppings:
Lime juice or lemon juice
Oregano
Onions

Well besides it being something we won't be cooking; my family always thought the house stunk when I cooked cabbage! LOL

Yes I do! It is a comfort food. I squeeze a little lemon juice over the bowl of menudo. Sprinkle a little bit of oregano and a nice handful of onions and viola it's yummy. I am craving it now and am thinking about having some this weekend. Here in NM they have menudo cookoffs like some places have chili cookoffs. Once you get past what you are eating, it is really good. Mexicans don't waste any part of the animal because they are so poor, so a lot of Mexican food has stuff like this in it.

I see it all the time in the meat counter at walmart and often wondered what was made with it; one of those things I should have just passed on and got over! LOL We have a lot of miggrant farm worker s around here so maybe your explanation is why walmart carries it here; same here arjsmom; no one wil have to fight me for it off the meat counter either! LOL

lol Since this is my last race before I leave home for school, I think I will need a comforting bowl of menudo this weekend. It really is a nice bowl of soup, unless you know what is in it. lol
