Spicy Bean and Corn bread Bake

2 (15 oz) cans spicy chili beans
1 pkg corn bread mix
2 T bacon bits
1/4 t crushed red pepper flakes
2 green onions, thinly sliced

Heat oven to 400 degrees. Spray an 11X7 inch glass baking dish with cooking spray. Spoon beans into baking dish. In medium bowl, prepare cornbread according to package directions.Stir in pepper flakes, bacon bits, and onions. Mix unil just blended. Drop by spoonfuls over beans. Bake for 25-30 minutes or until cornbread is golden brown.

I personally like to sprinkle shredded cheese over the beans before I pour the cornbread mixture on top.

Sounds good, Imight try it with a can of vegetarian chili with beans!

We keep it on hand for quick meals. It isn't bad at all ( that may be because we know we can't eat the others~ LOL), but I don't think it has much different flavor than the one with meat. We buy Hormel brand. But then again I make my regular chili recipe and just leave out he meat, add oat bran, rice, flax seed ground and no one can ever tell th difference till I tell them.

Interesting. I always wondered what my vegetarian friends put in their food that made it look so good.

Everybody that cooks that way has their own "special" touch that you use, but that is what works for us.

My coworker that moved is a vegetarian. She used to bring some pretty good looking lunches to work.

Oh darn, I thought maybe we could get some of her recipes! DH and I aren't vegetarian, but because of his limited food he can have we eat that way a lot; and it's usually prettty good!
