The apricot preserves along with the spices "sweeten" these carrots just right!
2 1/2 cups sliced carrots, about 1 pound
1/4 cup apricot preserves
1 1/2 tbsp margarine
1 tsp lemon juice
1/4 tsp grated orange rind
1/8 tsp ground nutmeg
Cook carrots, covered in a medium pan in a small amount of boiling water, about 8 to 10 minutes or till crisp tender; drain. Combine remaining ingredients in a pan and cook over low heat stirring constantly till preserves are melted. Stir in carrots and cook till thoroughly heated. 4 servings
