1 cup granulated sugar
2 eggs, beaten ( i use 4 egg whites)
1 cup persimmon pulp
2 cups all purpose flour
3 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1/2 cup oil ( i use unsweetened applesauce)
3/4 cup chopped nuts
1 cup raisins
Beat together sugar, eggs and pulp. Combine flour, baking powder, salt and soda. Combine pulp mixture and dry ingredients with oil. Stir in nuts and raisins. Turn into a greased 8x5" loaf pan and bake in apreheated 350 degree oven for 45 - 50 minutes or till bread tests done.
I go out late fall after a hard frost and start picking up persimmons and making pulp to freeze. Once the first frost hits it is a daily game between me and the deer on who gets the biggest batch of persimmons each day. This past year there were so many I finally stopped gathering and let the deer have the rest!
