Does anyone have any old recipes from your grandma or maybe some you remember from your childhood that were cooked in the pressure cooker? :confused:

Country Style Potatoes

1 tbsp olive oil
1/4 pound fresh mushrooms, stems trimmed, sliced
1/2 cup finely chopped onion
1/2 tsp salt
1/8 tsp pepper
1/2 cup chicken stock or water
4 cups potatoes in 1/2" slices
2 tbsp minced parsley


In the cooker, heat the oil and sauté the mushrooms and onions until the onions are wilted. Mix in all the remaining ingredients. Close the lid and bring to high pressure, then lower heat and cook for 3 minutes. Release pressure according to manufacturer’s directions and remove the lid. 4 servings

I make the most tender roast, any cut just melts in your mouth. My sons (26) prefers a cooked chicken in the PC to any cooked another way.
You can cook the roast, take down the pressure and add vegtables ( carrots, potatoes, ect.) then finish. Nothing compares.
Roast
You can brown first if you like, I usually don't. Put roast in, favorite spices. I use garlic, onion, bay leaf, celery and pepper. Add water usually about 1-2 c. Beek absorbes more water than a chicken does. Cook around 25-40 mins, depending on size of roast or chicken.
Sure cuts down on cooking time. You can pre-cut everything and keep in refridge untill you put it on to cook (keep potatoes in salt water to keep them from turning brown). Add fresh bread or rolls and you have dinner.

Pressure Cooker Bean Stew

3 tbsp. olive oil
1 onion,cooked & chopped
2 cloves garlic, minced
2 cups mushrooms,cooked, quartered
2 carrots,cooked & shredded
1 1/2 tsp dried basil
2 cups dried navy beans, soaked overnight
4 cups water
1 tbsp chili pepper flakes
1 lb. canned chopped tomatoes, undrained
10 oz. frozen spinach, thawed & squeezed dry

Heat oil in a pressure cooker over medium high heat. Sauté onion and garlic 3 to 4 minutes till softened. Stir in mushrooms, carrots and basil and cook 2 minutes. Transfer mixture to a bowl and set aside. Drain beans and combine with water and chili flakes in pressure cooker over high heat. Secure cover and bring to high pressure. Reduce heat and cook 5 minutes at stabilized pressure. Release pressure by running cold water over cover. Drain beans and add sauteed vegetable mixture, remaining ingredients and salt and pepper to taste. Secure cover and bring to high pressure. Reduce heat and cook 4 minutes at stabilized pressure. Release pressure. Serves 6

Spicy Black Beans
1/2 pound (1 cup) black beans, picked over
1 large onion, peeled and chopped
1 large green bell pepper, seeded and chopped
1 large red bell pepper, peeled and chopped
1-2 jalapeno pepper, seeded and finely chopped
1 3/4 cups water, vegetable stock or chicken stock
1/3 cup chopped cilantro
1 tsp dried oregano
1 teaspoon freshly ground black pepper
3/4 cup fresh salsa (click for recipe or use store bought)
2 tbsp lime juice
salt to taste


Rinse the beans and soak overnight or use a quick soak method (bring water to a boil, turn off heat and let beans sit for an hour or so before continuing).
Heat the oil in the bottom of a 4 quart or larger pressure cooker over medium-high heat. Add the onion and cook until onion softens, about 2 minutes. Add garlic and jalapeno and cook a minute or so more. Add the cilantro, oregano, beans, and pepper. Cover and lock the pressure cooker and bring to high pressure over high heat. Lower the heat to stabilize the pressure at high and cook for about 10 to 12 minutes. Remove the pressure cooker from heat and release the pressure with a slow or natural release method. Remove the cover and test beans for doneness. If necessary cover and return the pot to pressure and cook for another 2-3 minutes.
Stir in the fresh salsa and lime juice. Season with salt and additional pepper, if necessary. Serves 6

Here are two really good recipes for the pressure cooker using pork

Pork chops and sauerkraut

2 large cans of sauerkraut,undrained
6 bone in pork chops
1 1/2 cups water
1 tsp salt
1/2 tsp pepper

Place rack at the bottom of the pressure cooker. Place undrained sauerkraut into a 6 quart pressure cooker. Place pork chops on top. Pour water on top and sprinkle salt and pepper. Put the lid on the pot and turn the burner on high. Pressure cook for 30 minutes, following directions on pressure cooker.

Serves 6.

Pork roast with potatoes and kale

4 bunches kale
1 2 1/2 to 3 lb roast ,bone in preferred
Flour
3 tbsp vegetable oil
4 large potatoes, peeled and quartered
2 medium onions, diced
1 tsp salt
1 1/2 teaspoon pepper
Small section bacon, cut into about 8 cubes
Water

Kale can be prepared a day earlier. Rinse kale and break each leaf into two or three pieces. Place in pressure cooker with 5 cups of water. Add diced onion, 1 teaspoon salt, ˝ teaspoon pepper and bacon. Heat kale on high for several minutes until leaves begin to wilt. Place lid on pressure cooker and cook for 15 minutes. Discard bacon.
Heat vegetable oil in pressure cooker. Flour roast on all sides. Brown meat in oil and remove. Drain oil from pot and place rack inside. Put roast on rack and cover halfway with water. Add diced onion, 1 teaspoon of salt and 1 1/2teaspoon pepper. Pressure cook for 45 minutes, remove from heat and allow the cooker to cool. Once cool, take the roast out and remove from bone. Place roast back in the pot with potatoes on top. Add remainder of salt and pepper, replace lid. Pressure cook for about 15 minutes.
To make gravy, remove rack from pressure cooker. Take ˝ cup of water and rinse bits of meat and onion off rack and into the bottom of the pot with meat juices. Increase heat and mix 3 tablespoons flour or cornstarch with 3 tablespoons water. Add mixture to heated liquid and whisk until smooth.

Serves 4.

Stuffed Tomatoes and Peppers

6 medium green bell peppers
6 medium tomatoes
1 cup white rice
1/2 bunch chopped parsley
1 1/2lb. ground beef
1 lb. baby carrots
1 6 oz can tomato paste
3 tbsp lemon juice
Salt and pepper to taste

For the Rice Mixture Filling: In bowl, rinse rice and ground beef together under water. Stir in chopped parsley, salt, pepper, lemon juice and tomato taste. Stuff peppers and tomatoes with rice mixture.

SAUCE:
3 cups water
1 tbsp mashed garlic
2 tbsp lemon juice
1/2 cup chopped fresh mint leaves
Salt and pepper to taste

For the Sauce: Wisk together garlic, salt, pepper, mint and water.

Using a sharp knife, slice off the tops of peppers and tomatoes. Scoop out the seeds and inner fleshy parts of the tomatoes. Add rice mixture filling.
Place baby carrots evenly on bottom of pressure cooker. Placed stuffed tomatoes and peppers on top of the carrots. Pour sauce over tomatoes and peppers. Add a plate on top as extra weight to keep stuffed tomatoes from floating. Close lid, bring to high pressure then lower heat on stove and cook for 5 minutes. Release pressure using cold water release method according to manufacturer’s directions. Open lid and serve.

For any pressure cooker recipes be sure to read and follow the directions that come with your pressure cooker for detailed handling instuctions about the pressure.

Beef Stew

1 tsp oil
1 lb. beef, cubed
1 large onion, chopped
salt & pepper to taste
1/2 cup water
4 small potatoes
1 cup green beans
4 small carrots
1 cup tomatoes
1 tbsp flour
1/4 cup water

Heat the cooker and brown the meat in the hot oil. Add onion, salt, pepper and 1/2 cup water. Put potatoes, green beans, carrots and tomatoes on top of the meat. Put cover on pressure cooker and lock. Put on regulator. Bring to pressure over medium heat then lower heat and cook 10 to 12 minutes. Drop pressure by running under cold water till all pressure is released. Remove lid and make a paste of flour and 1/4 cup water and stir into stew to thicken.

Green Beans with Bacon


1 lb green beans
4 strips bacon, minced
1 small onion, sliced thin
1 tbsp chopped parsley
1/2 tsp salt
1/2 tsp pepper
1/2 cup water
1/2 tbsp lemon juice OR vinegar

Heat cooker and brown the bacon, drain off excess fat. Add beans and onion. Combine remaining ingredients and pour over beans and bacon. Place cover on cooker and regulator. Cook 5 minutes and then cool under cold running water to release.

Potatoes

small whole new potatoes OR other potatoes cut up small in size
1 cup water

Wash and prepare potatoes; put them and water into cooker and place lid and regulator on cooker. Cook 10 minutes and immediately run under cold running wate to release steam. Season with sale and pepper.

I also cook my potatoes for potato salad in my pressure cooker, really speeds that up!!

I put mine on the rack, but a SIL just puts hers right in the cooker with the water; neither of us have had a problem doing it either way.

Vegetable Chop Suey


3 tbsp olive oil
1 cup mushrooms, sliced
1 cup onions, sliced
2 1/2 cups celery, chopped (use leaves also)
3 chicken OR beef bouillon cubes
1 cup hot water
1 cup green beans, cut into 1" pieces
2/3 cup green pepper, sliced
3/4 tsp worcestershire sauce
1 tbsp cornstarch
2 tbsp water

Heat oil in cooker and lightly brown the mushrooms, onions and celery. Dissolve the bouillon cubes in hot water and place in the cooker. Add green beans, pepper, and worcestershire sauce. Put cover on cooker. Place regulator on and cook 3 minutes. Cool under running water. Make a paste of the cornstarch and 2 tbsp water to thicken.

Swiss Steak


2 pounds round steak
2 tbsp flour
1 onion, sliced
2 tbsp horseradish
salt & pepper
2 tbsp olive oil
1/4 cup water

Cut meat into serving size pieces. Mix flour, salt and pepper. Pound steak and roll in seasoned flour. Brown meat on both sides in hot cooker in oil . Sprinkle onion and horseradish over meat and add water. Cover cooker; put on regulator and cook 15 minutes. Remove from heat and let the pressure gradually reduce on its own. This should take about 10 to 20 minutes. The food will continue to cook while this is releasing.

Chicken and Noodles

3 pound ready to cook broiler fryer chicken, cut up
3 cups water
1 carrot, sliced
1 tbsp instant minced onion
1 tsp salt
1/2 tsp celery salt
1/2 tsp pepper
3 cups dry medium noodles
1 tbsp dried parsley flakes
1/2 tsp dried basil, crushed

Remove any fat from chicken. In a 4 quart pressure cooker combine chicken, 1 cup of the water, sliced carrot, instant minced onion, salt, celery salt, and pepper. Close lid securely. Put regulator in place and cook 10 minutes with regular rocking slowly, Reduce pressure quickly under running cold water. Remove cover. Add noodles, remaining water, dried parsley flakes, and crushed basil and cover BUT DO NOT SEAL. Cook over medium heat till noodles are done, about 10 minutes. 6 servings

Pork and Rice Supper

2 tsp olive oil
4 pork chops, 3/4" thick
1 - 6 oz pkg long grain and wild rice mix
1 - 3 oz can mushrooms, sliced
1 - 13 3/4 oz can chicken broth
1 tbsp instant minced onion

Heat oil in pressure cooker, trim fat off chops and brown them. Sprinkle with salt and pepper as cooking. Combine rice mix, undrained mushrooms and spoon over chops. Combine broth and instant minced onion and pour over the chops and rice. Close pressure cooker, put regulator in palce and cook 15 to 17 minutes with regulator rocking gently. Reduce pressure quickly under cold running water. Remove cover and serve. 4 servings

Want to cook rice really quick? Of course the pressure cooker does that with everything, but I was always afraid of cooking rice in it because I thought it might clog up the vent and explode on me. I tried this recipe and it worked; the only caution is to be sure to use the specified size of pressure cooker and it won't clog!



Brown Rice

In a 4 quart pressure cooker put 2 cups water, 1 cup brown rice, and 1/2 tsp salt and cover tightly. Put pressure regulator in place. Cook 15 minutes with the regulator rocking gently. Cool quickly under cold running water. Makes 3 cups rice.

Has anyone bought a new pressure cooker in last couple years? Last one I had was a noisey boucy metal topped one are they still the same?

dallasalice1, all my pressure cookers are several years old. The regulator is supposed to bounce around somewhat and they do sometimes make noise. How much it moves and how much noise it makes usually depends on how high you have the heat. Somethings need to cook at a higher temperature and somethings cook at a lower temperature. There should be a booklet that comes with a new pressure cooker that will explain on what to expect using a pressure cooker. If you are worried about how it is reacting I would have someone that lives near and has used a pressure cooker come over and watch yours and they can let you know if it is reacting normal. Good luck!
