2 pounds fresh shrimp
1 cup cornstarch
1 cup cream of coconut
3 tbsp. lime juice
2 cups flaked coconut
Vegetable oil

Peel shrimp and coat each one with cornstarch. Combine cream of coconut and lime juice and dredge shrimp through this mixture. Coat each piece of shrimp with flaked coconut. Heat vegetable oil in a deep fat fryer or deep skillet and fry until golden brown.

One of my all-time faves!

You can make Pina Colada Sauce to dip them in by mixing equal parts of pina colada drink mix, cour cream, and crushes pineapple.

Oh that sounds good! About the only time any more I get coconut shrimp is when we go to Joe's Crab Shack!
