1 package (10 ounces) frozen chopped broccoli, cooked and drained
6 hard-cooked eggs, halved
1/4 cup mayonnaise
2 tbsp Dijon mustard
1/4 cup chopped fully cooked ham
1 tbsp sliced green onion

CHEESE SAUCE

2 tbsp margarine
2 tbsp all-purpose flour
1-1/4 cups milk
Dash salt and paprika
1 cup (4 ounces) shredded cheddar cheese
2 tbsp grated Parmesan cheese


In a greased 11-in. x 7-in. x 2-in. baking dish layer broccoli and eggs. Combine the mayonnaise, mustard, ham and onions and spread over eggs. In a saucepan, melt butter and add flour. Cook and stir until bubbly. Gradually add milk, salt and paprika; cook and stir till boiling. Cook and stir 2 minutes more. Remove from the heat and stir in cheddar cheese until melted. Pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 400° for 10-12 minutes or until heated through. 6 servings.

I used to make green eggs and ham for my children sometimes for breakfast except I just added green food coloring to their eggs. lol

We used to do that all the time when we were in scouts, since DH can only have scrambled egg whites I colored them a different color every time we had them; made breakfast fun! LOL

It wa fun and the thing I liked about it is some of the patrols that had boys that never liked the cooking part they had to do got interested in doing some of the cooking then. They even did colored mashed potatoes a few times, looked funny, but I didn't care as long as they cooked~ LOL

Ewww! lol I am with you in that I'd do anything to get the kids to cook, but I cannot imagine colored mashed potatoes. lol
