I'm not real sure where I got this recipe;I've found it the other day in one of my files when I was looking for a quick breakfast bread. I use my kitchen sacle to weigh the flour and sugar; just haven't taken the time to calculate it.
19 oz. buttermilk baking mix
5 oz. all-purpose flour
7 oz. granulated sugar
3 large eggs
3/4 cup plain yogurt
3/4 cup orange juice
1 Tbsp. grated orange peel
2 cups (12-oz. bag) white chocolate morsels
1/4 cup finely chopped macadamia nuts
Preheat oven to 350 degrees. Lightly grease muffin pan.Combine baking mix, flour and sugar in large mixing bowl.Add eggs, yogurt, orange juice and orange peel; beat until well blended.Stir in white morsels. Divide batter into prepared muffin pan.Sprinkle tops with nuts.Bake for 20-22 minutes or until golden. Remove to wire rack for 5 minutes. Serve warm. Makes about 12 muffins.
