Indian Yogurt marinade
1/2 cup plain yogurt
1 clove garlic, minced
2 tbsp lime or lemon juice
2 tsp curry powder
1 tsp paprika
Blend ingredients together. Ust this to coat 2 pounds of cut up frying chicken parts before baking, broiling or grilling. Makes approximately 2/3 cup marinade.

Bock Marinade For Steaks
1 12-oz. Bock, or your local dark beer
2 tbsp garlic, chopped
2 tbsp red onion, diced fine
2 tbs worcestershire sauce
4 shakes tabasco
Juice of 2 limes
1/4 cup brown sugar, packed
1 tbsp coarse brown mustard
2 tbsp olive oil
Combine all ingredients . Pour over steaks and marinate from 4 hours to overnight.

Rib '' N" Beer Marinade
1 qt. Beer
2 cups Brown sugar
1 cup Cider vinegar
1 tbsp. Chili powder
1 tsp. Cumin, ground
1 tsp. Dry mustard
2 tsp. Hot red pepper flakes
Combine beer, sugar, vinegar, spices in a large pan. Bring to a boil, remove from heat, and cool. Place ribs in a large shallow roasting pan (do not use aluminum). Pour marinade over ribs. Turn ribs several times while they marinate about 24 hours in refrigerator. Drain ribs, reserving marinade. Arrange ribs on grill or rib rack and smokecook 6 to 7 hours, until meat is tender, basting with marinade every 20-30 minutes. This marinade goes well with any meat that is going to be smoked and grilled.

I like to use what I have on hand as a marinade. I get a different flavor each time.

One of the easiest marinades is to use Italian salad dressing that comes in a bottle for salads. You can put some in a zip loc bag add your chicken and freeze it and when you have thawed it out you have chicken marinated ready to cook!

This is a very simple 2 ingredient marinade that works well on steak. Hoisin sauce is a sweet spicy brown sauce made from soybeans, chile peppers, vinegar and other spices.
Hoisin marinade
3/4 cup hoisin sauce
2 garlic cloves, chopped
Place ingredients in a plastic bag; place steak in the bag and turn several times to coat and let sit about 30 minutes turmning occasionally. Do not use marinade a second time.

Bourbon Marinate for Steak
1/2 cup bourbon
1/2 cup olive oil
1/3 cup red wine vinegar
1/3 cup dry red wine
2 cloves garlic, crushed
1 tbsp. fresh ground pepper
Combine ingredients. Allow steak to marinate for 4 to 5 hours. Remove steak and grill over hot charcoal or gas grill, baste often with marinade.

Honey Glaze for Beef
1/3 cup tomato sauce
1/3 cup honey
1 tablespoon worchestershire sauce
2 tablespoons soy sauce
1 tab vinegar (I use white)
Mix well and marinate beef. 4hrs min overnight best.

Hamsteaks with apricot glaze
1/2 cup apricot jam
1/2 teaspoon cummin
1/4 cup french dressing
1 tablespoon dry sherry.
Heat jam (micro or saucepan) and mix in the rest of the ingredients.
Pour over ham steaks and marinate for 4hrs or overnight.
BBQ on both sides till heated through.

Glaze for chicken or pork (our fave for chicken)
(I find thighs fillets work best for bbq-ing as they don't dry out)
1/4 cup tomato sauce
1/4 cup honey
1/4 teaspoon five spice powder
2 teaspoons soy sauce
1 clove crushed garlic.
Mix well and marinate at least 4hours.
If using chicken drumsticks, after marinading cook in the micro for
2-3 mins to start the cooking process and cook close to the bone,
then put on the bbq.
Remember it has honey so will burn easily cook on low bbq.

Mango chutney glaze for chicken
1 tablespoon apricot jam
1 tablespoon mango chutney
1/2 cup mayo
1 teaspoon worchesershire sauce
2 teaspoons grainy mustard
1 tablespoon lemon juice
Mix altogether and pour over chicken
(Pound chicken if using breast fillets).
Marinate min 4hrs or overnight.
Baste chicken frequently while cooking.

Ginger Lime Sauce for chicken
Ginger lime sauce
1/2 cup brown sugar
1/4 cup lime juice
2 tablespoons rum
3 teaspoons grated green ginger (I use jar)
2 cloves crushed garlic
dash tabasco sauce.
Combine and stir in saucepan over low heat without
boiling until sugar is dissolved, then bring to boil.
Pound chicken breasts thinner.
season with salt and ground pepper
Cook on the bbq.
Pour sauce over chicken, then serve.

Curry honey glaze for chicken wings or drumsticks
1/4 cup honey
2 teaspoons curry powder
2 teaspoons soy sauce
1/2 cup water
1/4 cup oil.
Combine ingredients into a saucepan and mix till all is melted and combined.
Pour over chicken wings and marinate over night if possible.
Baste constantly while cooking on bbq.

Pomegranate Marinade
This is a wonderful marinade for pork!
2 oz vegetable oil
4 small dried red chilies
2 cups pomegranate juice
1/2 cup rice wine vinegar
1/2 cup chopped garlic
1/2 cup thinly sliced fresh ginger root
1/2 cup packed brown sugar
1/4 cup mushroom soy sauce
6 ounces tamarind paste (available in gourmet food shops;OR substitute a teaspoon each of dates, dried apricots and lemon juice for a teaspoon of tamarind paste. Chop the dates and apricots into fine pieces and add the lemon juice.)
1 bunch green onions, chopped
1 tbsp ground black pepper
2 tbsp ground coriander
In a pan heat the oil over moderate heat. Add the chilies and saute for 15 seconds. Transfer to a deep casserole. Stir in the remaining marinade ingredients. Submerge pork in the marinade. Cover with plastic wrap and marinate in the refrigerator, turning the pork once, for 3 hours. Then grill the pork.

Vietnamese Marinade
This is great for chicken!
5 tbsp fresh lime juice
1/4 cup vegetable oil
4 garlic cloves, crushed
1 jalapeno, halved lengthwise &thinly sliced
1 shallot, thinly sliced
2 tbsp Asian fish sauce
2 tsp sugar
Salt & pepper
In a bowl, whisk all of the ingredients together.Enough to marinade 4 chicken breast: Put in a zip loc bag, seal and toss to coat. Refrigerate for at least 30 minutes and up to 4 hours

One of the easiest marinades for summer time grilled chicken is simply one can of concentrated frozen apple juice (don't dilute) and a half a can of frozen lime juice. Let them melt and then marinate your chicken for an hour. Grilled, it is just great and I serve it with homemade salsa ..peach or tomato.

I'll have to get some fish sauce one day ther are a lot of asian recipes that call for it.
Don't have frozen juices here (only those I freeze myself) as far as I know but I can get the fresh stuff so that lime and apple juice sounds good, will try that with my chicken soon.

Bilby ...it's an easy one to do at the last minute too because both apple and lime are fairly strong so it doesn't take that long of a time period to get a good flavor. I also use the chicken for sandwiches when we're eating outdoors. Wonderful with a mayo you can flavor yourself.

Beer Marinade for country style pork ribs
12 oz. can of any beer(cheap stuff works well)
12 oz. water
1/2 cup veggie or corn oil
2 T. worchestershire sauce
2 T. oregano or Italian seasoning
2-3 cloves finely chopped garlic(more if you are a garlic freak like my family:rolleyes: )
1 T. black pepper
hot pepper sauce, as much as you like
Mix well together in a ziplock bag. Add about 3-4 lbs well washed pork ribs and marinate for about 6 hours. Drain well and grill over med coals. Tastes great plain or brushed with your fav bbq sauce.

Garlic Sour Cream Poultry Marinade
1 cup sour cream
1 tbsp lemon juice
2 garlic cloves, crushed
1/2 tsp salt
1/4 tsp pepper
1/2 tsp celery salt
1/2 tsp paprika
1 tsp worcestershire sauce
Combine all ingredients and pour over poultry, covering well. Let stand overnight in refrigerator.

This is a great marinade I've used on steaks
1/2 cup red wine vinegar
1 tsp chopped fresh basil leaves
1 tsp chopped fresh rosemary
1 tbsp Dijon mustard
1 tsp finely chopped fresh garlic
1 tbsp olive oil
1 tsp worcestershire sauce
Combine all ingredients into a large plastic food bag and add your steak. I like to marinade mine about 1 hour, but I suppose a good 15 to 20 minutes would work.
