Mashed Cauliflower

1 bag frozen cauliflower florets
4-6 oz of cream cheese (to taste)
1/4 cup heavy cream
2-4 oz of butter, softened (to taste)
garlic salt, ranch dressing powder, pepper, cheddar cheese, parmesan, onion powder, etc...

Microwave cauliflower approx. 8-10 minutes). Drain. Squeeze as much water out as possible.

Put the cauliflower into a food processor on high for a few minutes.

Add the cream cheese, and butter. Mix well, making the cauliflower creamy and smooth.

If it is too thick, add a tiny bit of cream, mix, and check again. Too much liquid and you will end up with soup (hence the draining!)

Add seasoning to taste. A few shakes of Ranch dressing powder can really spice it up. Or add garlic, salt and pepper, cheddar cheese, or a dash of chili powder.

Mia, How long have you been low-carbing?

Did you follow a specific plan or just a general, low-carb plan?

I've been low carbing for right at a year now. After my fifth child I got frustrated when that last 10 pounds wouldn't come off. I've actually lost 30 pounds and gone from a post-partum size 12 to a size 6 and have never felt better in my life. (I was a size 10 through high school and college...not really "fat" but never felt good about my size either.) I also walk at night and try to do some strength exercises a couple times a week.

I have read some Atkins and South Beach stuff, but basically I just watch what I eat now in terms of carbs. I don't follow a specific plan. When I first started, however, I kept my carbs at 20 per day for the first two weeks, and the pounds fell off. It was amazing! And I do not crave carbs....nothing white in my diet anymore! LOL

Do you low-carb or have you considered it?

Although we don't do low carb,I'm always looking for new recipes. Hunbby is on a very strict low fat (no more than 30 g per day total fat) so with some subs I can make this for him. The mashed cauliflower just looked so interesting to me! Thanks for the idea!

When I make mashed cauliflower, I use the leftover chicken broth from the chicken that I just cooked. It really adds flavor.
