2/3 cup dry yellow split peas
4 3/4 cups water, divided
1 bay leaf
3 tbsp canola oil
1 large onion, chopped
1 tsp ground cinnamon
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp ground cloves
1/4 tsp ground turmeric
1 1/2 cups uncooked long grain rice
2 1/2 cups chicken broth
In a saucepan combine peas and 4 cups water. Bring to a boil and reduce heat and simmer uncovered for 30 minutes or till tender. Drain and keep warm. In a large nonstick skillet cook the bay leaf in oil till golden. Add onion and saute till tender and stir in seasonings and saute 30 seconds. Add rice and cook and stir 3 m,inutes. Stir in broth and remaining water. Brig to a boil and reduce heat, cover and simmer 20 minutes or till rice is tender. Add peas and heat through. 6 servings
