Instead of "dotting with butter" in a recipe; spritz with nonstick cooking pray instead. It usually works better and saves calories.

To remove fat from hot meat stock drop ice cubes into it and the fat will stick to the ice cubes and an be scopped up easy.

When a recipe calls for sauteeing onions or mushrooms in butter, add a little water to veggies and cover the dish and microwave them instead.

Use leftover juice from canned fruit to replace some liquid called for in cakes, muffins,gelatins, puddings, and baked items. It is good also stirred into a glass of iced tea to sweeten it.;)
