Veggie Stuffed Potatoes

2 medium baking potatoes
1/2 sour cream
1 cup shredded cheddar cheese
1/2 cup frozen chopped, thawed
1/2 cup chopped marinated artichoke hearts
2 T crumbled cooked bacon
1/2 t garlic salt
1/4 t lemon-pepper seasoning

Place potatoes on a microwave-safe plate. Pierce several times with a fork. Microwave on high for 6-8 minutes or until tender. When cool enough to handle, cut a then slice off the top of each potato. Scoop out the pulp of each so there is only a shell left. Discard the tops. In a bowl, mash the potaoes with sour cream. Stir in the cheese, broccoli, artichokes, bacon, garlic salt, and lemon-pepper. Spoon into the shells. Microwave uncoverd on high for about 1-2 minutes or until heated and cheese melts.

Sounds like some dishes I make but had not thought of the artichoke part: i'll have to consider that after I look up the nutritional value for DH

I don't know what is off limits, but they sure are good.

He has to eat as close to zero fat as he can; saturated fats are his biggest problem. Even with meds and watching his diet it tends to run a little high most of the time. Docs have all said it is a genetic flaw. All his brothers and sisters have the same probem; dad died at 52 of third heart attack, one of his sisiters died at 48 of a massive one. He can eat one time what would be extremely good for most people and it throws his levels way out of whack!

There is no sat fat in artichokes.

Here's another version of it!


Vegetable Stuffed Potatoes

4 large Potatoes, baked
1 1/2 cups fresh broccoli florets
1/2 cup sliced fresh mushrooms
1/4 cup sliced green onion
1/4 cup chopped sweet red pepper
1 cup fully-cooked lean turkey or lean ham, diced
1/2 cup fat free plain yogurt
1/4 cup skim milk
2 tsp cornstarch
1 tsp dijon style mustard
2 tsp grated Parmesan cheese
Dash ground nutmeg


In a 1 quart microwave safe casserole dish, combine broccoli, mushrooms, green onion, red pepper and 2 teaspoons water. Microwave covered, on HIGH for 3 - 5 minutes or until vegetables are tender. Drain well. Add the turkey or ham. Cook, covered, on HIGH 2 - 3 minutes or until heated through.
Stir together yogurt, milk, cornstarch, mustard and nutmeg. Add to broccoli mixture. Cook covered on HIGH 2 - 4 minutes or till mixture is thickened, stirring every 30 seconds. Spoon over hot potatoes. Sprinkle with Parmesan cheese. Makes 4 servings
