This recipe comes from Hotel Santis on the main square In Appenzell,Switzerland. It's great with just a salad!
1 kg/2 1/4 lb. firm, waxy potatoes
salt and pepper
100g/3 1/2 oz bacon, cubed samll
1-2 tbsp oil
150g/5 oz Appenzeller Rass cheese, grated
Cook the unpeeled potatoes in boiling salted water till barely tender. Drain and leave overnight. Peel and grate them on a coarse cheese grater. Season with salt and pepper. Fry bacon in heavy skillet till fat runs. Add more oil if needed to film bottom of pan. Mix in potatoes, then press down to form a cake, Cook for about 20 minutes over moderate heat till underside is crusty and golden. Invert a plate on top of apn and turn out the Rosti. Heat more oil in pan and slide Rosti back in to cook other side- about 10 minutes. Sprinkle the grated cheese on top, cover and leave a couple minutes to allow the cheese to melt. Serves 3-4 as a main dish
