Apple Cake

4 C Winesap apples, chopped
2 C sugar
3 cups flour
1/2 tsp nutmeg
1 1/4 t cinnamon
1/2 t salt
1 C. pecans
2 t soda
1 C vegetable oil
1 t vanilla
2 eggs, beaten

Mix apples and sugar. Let stand for 1 hour stirring often. Add remaining ingredients to apple mixture and mix well by hand. Bake in loaf pan at 350˚ for 1 1/2 hours.

I have to substitute applesauce for oil in cake recipes; do you know if this one is already mosit with the apples in it? If it is already a very mosit cake I may not be able to do the substitution.

It's moist, but I have never used applesauce instead of oil. It seems like the applesauce would taste good with the apples though.

Because of DH diet I always use baby food or unsweetened applesauce when I bake. I've had very few flops, but thought I'd ask, If I make it I'll let you know how it turns out.

One day while we had company one of our visitors went into my pantry and came out with the weirdest look on their face;they couldn't figure out why I had a section for baby food! LOL
