My mother used to make this every Christmas.

Divinity

3 C. sugar
1 C. light corn syrup
1/2 C water
1/4 t salt
2 egg whites
1 t vanilla extract
1 C finely chopped pecans

Combine sugar, corn syrup, water, and salt in Dutch oven; cook over low heat stirring constantly, until sugar dissolves. Increase heat to high and cook without stirring until the mixture reaches the hard boil stage 260˚. Beat egg whites (at room temperature) in a large mixing bowl until stiff peaks form. Pour hot sugar mixture in and then stream over eggs white while beating at high speed with electric mixture. Add vanilla and beat another 5 to 10 minutes until it holds shape. Stir in nuts. Drop by spoonfuls on wax paper.

My grandmother used to make these all the time too. I've made them in the past,but don't have real good luck with them up here; since we don't have climate controled house any longer it is usually too humid for them set correctly!

They are very difficult to make. It is probably easier for me than you because it is always dry in West Texas and New Mexico.

I would like to add that these can be dyed with food coloring for the holidays. They are usually bright white, but with food coloring, they can be green and red for Christmas and other special holidays. Sprinkles are also good on them.
