Cheesy 'Childa Casserole
1 lb ground beef
1 medium bell pepper, chopped
1 medium onion, chopped
1 clove garlic, minced
1 can pinto beans, drained
1 (15 oz) can tomato sauce
1 C. Picante sauce
1 t ground cumin
1/2 t salt 12 corn tortillas
2 C. shredded cheese
Optional:
shredded lettuce
sour cream
chopped tomato
quacamole
Brown meat with pepper, onion, and garlic. Drain. Add beans, tomato sauce, Pincante sauce, cumin, and salt. Simmer 15 minutes. Spread a small amount of the mixture on the bottom of a 13X9 inch baking pan to cover the bottom. Top with 6 tortillas, overlapping to cover the bottom of the dish. Cover the tortillas with half of the cheese. Repeat the process in order of the meat, tortillas, and cheese. Cover with foil and bake at 350˚ for about 30 minutes or until hot and bubbly. Serve with the optional favorites.
