Almond Chicken Casserole
3 medium chicken breasts
1 stick butter
1 box Ritz crackers
1 (8 oz) carton sour cream
1 C chicken broth
1 can cream of mushroom soup
1 can cream of chicken soup
1 C sliced almonds
salt and pepper to taste
Melt butter and mix with crushed crackers to make a crust in a 2 qt casserole save 1 cup of the crust mixture. Mix chicken with sour cream, soups, broth, and almonds. Top with the remaining crust mixture.
Back at 350˚ for 30 minutes or until hot and bubbly.
